The ASD(Anaerobic Slow Dry) Natural Process:
Freshly harvested coffee cherries are placed into sealed, airtight tanks for 1 to 5 days. As the fruit begins to ferment, carbon dioxide builds up and removes all oxygen, creating a unique environment where the coffee ferments inside its own fruity juices.
Once the fermentation period is complete, the coffee cherries are spread out on raised drying beds. Instead of drying quickly, the whole, intact cherry is dried over a drastically extended period (often 40 to 60 days) to lock in deep, complex flavors.
