They are named after the native birds of the Bolivian forests called “Charata”, which consumes the most mature coffee cherries produced in an agroforestry system. Once the Charata bird has ingested the cherry, it drops it in the vicinity of the coffee cherry plants ~ The cherry passes through its digestive system, and takes advantage of the natural fermentation process within it. They are very special coffee since the Charatas prefer Geisha coffee cherries over other varieties such as Catuai or Caturra.
